Root Beer Float Slushie

Well it has been pretty warm around these here parts. Some might even say TOO warm, but it is definitely warm enough to find some new refreshing treats to help everyone stay cool out there. My girls love root beer floats and I was wondering if we could use our ice cream maker to create some kind of root beer float slushie.  Fast forward to a few ingredients later, and I think we found ourselves a winner!

Cool, creamy and frosty, behold the root beer float slushie

So all you need is your Cuisinart 2-quart electric ice cream maker, and a chilled inner canister.  You will need the following three ingredients:

4 1/2 cups of your favorite root beer
1 cup of heavy cream
3/4  cup of sugar

Pour the 4 1/2 cups of root beer into a measuring cup.

Add the 1 cup of heavy cream and the 3/4 cup of sugar into a larger bowl. Once they are mixed together and the sugar is dissolved, pour the entire concoction into your chilled inner ice cream canister for your machine, place the stirring paddle, place the lid on securely, and turn on the machine for 22 min.

Churn baby Churn!
Once finished, turn the machine off and start scooping the frosty goodness into the nearest glass...

The consistency of a Slurpee, the awesome taste of a root beer float
The heavy cream and sugar have mixed together during the spin time, to give it that mock ice cream flavor, and the carbonation in the root beer stays bubbly and fun.  Hand these off to some near by small fry and you will have some happy smiles... Oh, here are some small fry now.

They lovely ladies had almost finished theirs before I could even snap a picture
Here's some close ups of our root beer-y goodness

Frothy, root beer and cream flavors come shining through
We just loved the way this turned out.

You know you want a root beer slushie right this minute, don't you!
Oh and by they way, after we had our fill, we still had a bit of this deliciousness left over.  So I put it in a container with a lid and put the whole thing in the freezer for later, when hubby and my other daughter would be home.   The thing that makes this different than freezing ice cream, is that it never really hardens into a scoop-able ice cream, the soda factor makes it freeze almost as is.  So when they came back later, I could just scoop and scrape out more into the cup and it still had the texture of a slushie.
Now if you are saying to yourself, darn, this looks delicious, but I don't have me one of them fancy 2-quart ice cream makers.  My question to you is... WHY?  You need one of these handy dandy machines, like now.  We made ours a gift for my hubby for father's day three years ago, and we have made so many homemade ice creams and treats using this bad boy since.  I seriously have not bought ice cream now in years.  We make it fresh, we know all the ingredients that go into it (often using seasonal fruit and fruits from our own garden), and we are always experimenting with new ideas and flavors, and now refreshing beverages. Hence, the birth of the root beer slushie.
Enjoy!!

Chocolate Covered Cherry Cake

One of my favorite flavor combinations in the entire universe is chocolate and cherries.  Chocolate.  Followed by cherries. Cherries, followed by chocolate.  Chocolate cherry chip ice cream with chocolate chunks. Cherries covered in chocolate. Cherries, dipped in chocolate, and flying through space (I did say the universe).

Many moons ago, I received a very important culinary book in my budding, yet illustrious cooking career.  It was authored by Anne Byrn, the Cake Mix Dr., (aka genius), in which she would take regular old boxed cake mixes, add a few extra ingredients, and made them taste like they were homemade.  Is she a Doctor? An honorary one perhaps, but in reality, she is a wizard. She takes cake mixes as a base and can turn them into, not only scrumptious cakes, but goes on to defy the laws of cake nature by also turning them into all kinds of concoctions, such as cookies, tortes, bars, brownies, crumbles, dump cakes, it's crazy I say!

Crazy like a fox, I mean.

Speaking of crazy, try not to lick your screen right now when you feast your eyes on this delectable chocolate covered cherry cake.

Chocolate covered cherry cake - is the bomb diggity

The most ironic part of this post, is that I have made this, my favorite cake, for years. YEARS! I thought for sure I had blogged about it ages ago, but to my chagrin, I realized today I have not shared my most favored, easiest cake with the world.  So here you go.  Be prepared, because this baby only has FOUR ingredients. That's right FOUR.  You will need:

1 box chocolate cake mix (I picked chocolate fudge)
1 21oz can of cherry pie filling
3 eggs
2 teaspoons of almond extract

Anne's original recipe by the way has 2 eggs, and 1 tsp of almond extract - everything else is the same.  Also if you noticed, no OIL is needed in this recipe.  The fruit in the cherry pie filling will add a wonderful amount of moisture into this cake, seriously days later and it will still be moist and tasty and won't dry out.  Ha, like it will really last for days, what am I saying? Once you take a bite, you'll be tempted to eat the rest of it straight out of the pan and not share with anyone. So take these said four above ingredients and put them into a bowl.

Chocolate cake mix, three eggs, one 21 oz can of cherry pie filling, and two teaspoons of almond extract
After that mix them with an electric mixer for about 30 seconds, scrape down the sides, then blend for one minute, 30 seconds more. Pour into a prepared (greased and floured) 9x13 pan.

Nothing to see here kids, just bakin' on a week night to satisfy a chocolate craving
Bake according to package instructions, I baked mine at 350ยบ for 34 minutes, until the center was set and a toothpick inserted into the center came out clean... and the house smelled like a chocolate cherry fairyland.

Let this cool and then top this bad boy with anything you wish.  A dollop of homemade whipped cream, your own homemade butter cream, or a any store bought variety of chocolate frosting.  Wait, I'm having an epiphony, warmed up cherry sauce (Note to self: going to try that next time)! At the time of this particular baking, I was having a major chocolate craving, coupled with a clash of down right laziness, so I went for the Betty Crocker Homestyle butter cream frosting in the tub.  Slather that puppy on the top and take a deep whiff of all that chocolate cherry goodness.

Sorry for the boring 9x13 pan.  This is week night cake, we don't have to look pretty, we just have to taste good.
Time yourself and see how long you can wait before you slice yourself a piece.

It's chocolate, it's cherries, it's covered in more chocolate.  You can NOT go wrong
This thing was so moist and dense that it was hard to cut a piece that looked perfect.  Look at all the goopy molten goodness with chunks of cherry here and there...

One more view from this angle:

Don't forget to put some on your fork.  You can push your fork through this entire piece of cake and the whole section will stick to the tines.

Anyway, this cake is so awesome.  The double hit of almond extract really brings out a nice cherry flavor that is not overpowered by all that chocolate. This is a great go to cake to bring to parties, potlucks, and family gatherings.  The batter also makes for nice, rich, people will be asking for more of them plus the recipe cupcakes.

The 4 ingredient chocolate covered cherry cake - easy and delicious!

The best part about this four ingredient recipe, is that you can do different cans of pie filling and different flavors of cake, for an almost unlimited combination of flavors.  I have made an apple spice cake in this same fashion (click here) with a cinnamon glaze that is to die for!  I still want to try different fruits with the bases and see what I can come up with.  For now, I will bask in this super awesome chocolate cherry goodness, and know that it was GOOD!  Nay, Delicious.

Chuck E Cheese - Why I'm not going back

Well, I have a slight rant.  It's been quite a while since my last rant, so I'm totally over due, right?  This time, I have my sights squarely on Mr. Chuck E. Cheese .  Now that I'm thinking about it, what the heck does that "E" stand for anyway?  Esquire? A quick Google search reveals that the "E" stands for "entertainment".  Hold on while I hold my sides and laugh.  Wow. Really? Okay, well I guess if "entertainment" also means the brutal, simultaneous violation of all your five senses as a parent, then, ya, I'd say the "E" is right on!

Hi, I'm Chuck E. Cheese.  I will make you question your will to live

So maybe you don't have any kids, or maybe it's been a few years since you've been forced to go to a Chuck E. Cheese establishment.  Let me paint a real pretty picture for you. Chuck E. Cheese is for kids.  It is not however, at all, in anyway shape or form, for adults.

So your kid excitedly brings home a birthday invitation from school.  They are thrilled.  I am thrilled they are being counted as a friend of someone else in their class, enough to garner a party invite.  Me, priding myself on fun, kid-picked themed parties with all the well-planned trimmings, have always opened these invites with a mixture of hope and curiosity. Will I find a kindred spirit party mom?  Let's face it, school birthday party invites are a really great way to meet other parents and connect.  I know tons of people that just drop their kids off at a total stranger's house and come back a few hours later without a second thought in the world (what, do they have a death wish?). How can you be so trusting? What is wrong with you I want to say!

Bye Billy.  Mommy and Daddy don't love you as much as we love shopping without you...

Well I, being on the overly-cautious side, always offer to stay, help, hang out with the parents, make sure my kid is okay and having a good time.  If I just so happens that I find a fun kindred spirit mom, or some awesome party ideas for my blog it's a win win.

Let's face it.  If you open the envelope, and get that Chuck E Cheese invite... your heart sinks.  You know... deep down...the parents have given up.  Just phoning it in, really. You might as well just buy a store bought cake, play the sad trombone sound, and call it a day.  Oh I know they make it enticingly easy there for busy grown ups at Chuckyland.  No set up, no clean up after,  and no mess. Kids like pizza.  Kids like video games.  Sounds like a winner in theory... until you get there that is.  Hey we are celebrating the one year anniversary of life of your child.  You only have one day a year to make it special.  Do you really want to hand the whole day over to a creepy bugged-eyed rat in a dirty costume? Any kid would answer with a resounding YES... but is it worth your grown up soul? (cue evil music here)

Your soul looks nice, can I... EAT IT?

That's right SOUL.  I pert near lost my soul last weekend when I begrudgingly took my excited 7-year-old to Chuck E. Cheese.  Her first time. Maybe it won't be as bad as I remember, I thought.  My older two children had been in years past and I had gone, I remember it not being fun, but it was tolerable, right? I can do it, right?  No. The Answer is NO.  The answer from this day forward will always be NO.

We walked into the dimly lit establishment on a bright spring morning. So, I ask myself, is 10am too early for brain assault and pizza?  Apparently not.  It was like coming from the beautifully smelling, cool morning air into a dank cave of despair.  Literally.  The first two smells that hit me full frontal, were the smell of piss...and burnt cotton candy.  It was overwhelming. Shortly after that, the smell of dirty socks and feet added a nice secondary wave to the olfactory invasion. I almost turned around and left, it was that bad.  How can they serve food here? It smells like a sewer!  A sewer where spun sugar is burnt mercilessly and twirled on sticks by sweaty feet.

Don't forget the sound.  It's loud in there.  Not just loud, like, hey here's a bunch of clanging machines and screaming kids in a small confined area regular loudness, but like DEFCON ONE loud.

It's about to hit the fan... Joshua
Like, turn everything up to 11 and pray for the best.  Jackhammers performing in unison with the Blue Angels flying in formation overhead during a 21 shot gun salute at a rock concert would be a happy, peaceful alternative to the noise level at Chuck E. Cheese.  Mind NUMBING would be an understatement.

Dirty.  Everything is dirty.  Tables are sticky, chairs are sticky, the floor is sticky.  Should a floor be sticky??  Well it should, if it's made up of carpeting possibly stolen from a Carnival Cruise ship reject pile from 30 years ago.  I can only image the layers of packed-in filth of three decades of kids running, playing, barfing, and well, obviously pissing. I know they probably say they clean it, but personally I can imagine it never having been cleaned.  Like ever.  I picture the Chuck E. Cheese vacuum cleaner covered in dust and cobwebs in the utility closet, still in the original box.  There were cups of dirty game tokens were sitting on the birthday girls' table ready to hand out.. some were actually stuck together with some unknown substance. Yikes.  I take a scan of the room, and all the toys and machines in the building I can see (I'm imagining) that are never wiped down or sanitized, and that every sick kid in town has wiped both their runny nose, or alternately scratched their backsides, and then the start button within seconds of each other.  I had only been there 10 minutes and seriously felt like I needed a shower.  Ebola and MRSA everywhere.... Where was my hand sanitizer?  In the CAR.  DANGGGGIIITTTT.

The party room is a big room, full of cafeteria tables.  That's right, hey birthday  kid, you're not that special.  We're going to celebrate your birthday with countless, nameless others strangers at the exact same time, in one big, loud, room.

Chuck E says "You're not that special!!"
There's a large video screen in stage in front of you, and a robotic rat yells every so often that the Chuck E. dance is about to begin and a "show" is about to start.  The announcement that Chuck E. himself was coming was so deafening, I literally had to cover my ears for fear of permanent hearing loss damage.

Okay, as I take in shallow breaths so I don't have to fully taste the smell in the air... I still an trying to remember, that Chuck E. Cheese is suppose to be fun for KIDS.  I'm here for her.  My kid is so thrilled to see her friends, they head immediately for a climbing structure in the middle of the room.

She runs back to bring me her boots.  Heck yes child.  Please take off your feet protectors and really grind your socks into that fore mentioned "carpet".  Excellent idea.  Note to self: Burn socks later.

So we go through the whole party.  Pizza, (the kids ate it, with that smell so strong in there, I couldn't even fathom trying to eat something), presents, game tokens, and running around in socks, (if you are seven, and are so inclined).   Flash forward to the end of the party, because this is where it goes down hill quick.  About 15 minutes before the party is up (yes, I'm counting every second until we can get the heck out of there and back-timing my escape, thanks for asking), and by now I have a pounding headache, am literally nauseous, overheated, and super irritable, I'm thinking this would be a good time to cash in our tickets and stand in line for those awesome $1 store toys they have lined up as prizes.  We head over to the ticket machine, and my daughter has, I'm going to guess, one billion tickets.  Some are in sets of two, there are a few with four or five tickets attached, but most, I'm going to say 97.4% of them are individual tickets - and you are going to want to trade in a good portion of your life to turn them in here.

This handy item will gobble up tickets and print out a receipt on how many tickets you have.  Ingenious really, however, see that dark black speaker on the lower right hand side?  Well it makes a sound that I believe is suppose to be a "gobbling up" sound.  Chewing, grinding, not exactly sure.  What I DO know, is that it sounded like a demon, and was turned up to deafening levels, on TOP of the DEFCON ONE level ambiance of the regular room noise.  Here my baby is so very patiently feeding tickets one by one into the mouth of this thing, and I was of course standing right next to her, hunched over like Quasimodo (cause the ticket eater thing is 2 feet off the ground) trying to help, and this thing was SCREAMING in my ear.  I even took a video of it, because I had the time. That's right. It took her 15 minutes to feed all her individual tickets in.(Imagine you have a screaming head ache, are nauseated by the overwhelming stench of the room, squatting uncomfortably, then turn the volume up and stick your ear next to this for a while).  I'm not sure with the video compression if the loudness factor will shine through, but you get the idea.

By the end, I was sweating, shaky, so ready to punch Chuck E right in the face if he happened to dance by.

We get our receipt of 360 tickets, and realize a giant line has formed over by the crap-o counter toys.  It's already 15 minutes PAST the end time on the invite, and now I realize I'm going to be at Chuck E. Cheese even longer than I thought I could ever stand it. While we are waiting in line there, my baby realizes she doesn't have any shoes.  Say what?  Oh, that's right (as I gaze down at her jet black - formally white socks), she took them off under the party table.  I tell her to stay in the the long line while I run over, and of course, another whole party has moved in to where our table had been.  "Happy birthday nameless other chap", I think as I walk with my head near my knees like a Romanian acrobat scanning under all the tables. Darn. No boots. Look under all tables, no boots. Stop a dazed-looking worker with a name tag, she says they have a lost and found!  Sounds promising.  She disappears behind a door.  I wait.  I wait.  She never returns.  I can't leave my baby alone in line for that long, so I run back and she's all alone crying in line because her boots are lost.  Now I'm trying to figure out how to watch her crying in line, AND hunt down her boots with the confused minimum wage workers before we get up to the front of the line so I can help her pick out prizes. Time was ticking... it was like an evil game show.

I talk another worker into looking in the lost and found box for me, and a few minutes later, she comes out with some boots!  Hey, black boots!  Oh wait.  Not. Our. Black. Boots.  Dang it.  My baby bursts into tears and we are almost up to the counter to pick our our cheap arse toy prizes.  I decided to call the original birthday mom on my cell phone, to see if maybe she grabbed the boots and took them home with her.  As it starts to ring, I look across the room and SEE the mom at a new table on the other side of the restaurant, so I run over there and sure enough, she has our boots!  Sweet.  Bless you lil' mama. You might have just caused me two hours of mental misery, but you saved my kids boots. I'm going to call us even. I run back while triumphantly holding the boots high over my head, and I see my baby's mouth drop open in joy across the room that mommy had found her boots! Hooray!  Boots = We can LEAVE!

She had been through the line by now... but where were her arm full of prizes?  We had stood in front of that screaming demon ticket eater for what seemed like an eternity to get our 360 flippin' points, and my baby didn't have any prizes.  Dollar store crap or not, we stinking EARNED those points.

I (I mean we) at least had a Chinese yo yo and a plastic bracelet coming our way. Three hundred and sixty points is the back row of the bottom counter baby, we could have had a clapping hand, a pen with googly EYES!  No one was behind the counter. They are lucky they were gone.  I was about to go all Chuck Norris (another famous Chuck) and roundhouse kick someone into next Tuesday.  My baby's receipt was all gone, and she was holding... a miniscule bag of cotton candy.  She had traded away all of her ticket points for the only thing she wanted... and she was happy.  I didn't have the heart to tell her that sneaky Chuck E. Cheese lady had pulled a fast one over on her while I was running all over the world to find her boots.  "Let it go" Elsa would say.  She was happy.  She loves cotton candy.  She has been having a great time today.  Chill out mama.  But that screaming demon ticket machine ... my ears are still ringing... Let it GO... So - Speaking of going....

Well the best news of all was that we could GO.  I am sorry to say I had to spend an extra 43 minutes inside the hellmouth that is the chuck e cheese (I really don't feel like I need to give it the capitalization anymore, it doesn't deserve it) and we were high-tailing it for the door. We come squinting out into the beautiful sunlight and I start to deeply breath in the fresh, sunny spring air with all my might.  The first non-piss filled fresh air I have had in 163 minutes.  Hallelujah.

Funny screen shot:  I actually have a screen shot of my text message to my hubby when everything was going down on that day, it cracks me up now:

Ooo Bonus story time!!  We get out to the car, and I realize... my phone is still connected with someone.  Oh that's right.  I unknowingly have been leaving a 10 minute muffled message on the host mom's voice mail.  Holy buckets.  I was so grumpy at the time, who KNOWS what I mumbled while we frantically searched for boots, got ripped off at the prize counter, and escaped into the bright noon-day sun.  I pray with all my might she realizes it was a butt dial call and deletes the message and doesn't listen to the whole thing.  Please dear Lord.

I walked in the door when we got home. Totally spent. Like I had run a marathon, or had just been to Haiti on an oppressively hot day. I slumped down in a chair, took one look at my husband and I said... "never again".  If we ever get another chuck e cheese invite, you are going.  He calmly agreed and gave me two aspirin he had waiting for me in his hand... Oh yeah, also we need to burn some socks.

The End.

Warm Taco Dip

I'm sure like the rest of the country, you might be gearing up for the super bowl this weekend.  We tried a recipe over the New Years holiday that turned into a huge hit.  It was easy, delicious, and I'm surprised to say not one, not two, but all THREE of my girls ending up loving this stuff!  Matter of fact, if we are confessing our sins here, I actually ended up living off this dip for a few days.  True. Story.  But first, the dip!

I decided to try this recipe for our New Years Eve gathering this year, after seeing it on Pinterest here. First, because I thought it would be a crowd-pleaser  (well who I ask you, does not absolutely love tacos), and secondly, because I already had most the stuff needed for the dip in my house.  It's a  win win.  Plus, you only need a few ingredients to pull this off:

The original recipe called to cook this in a crock pot.  I have since done it both in a crock pot and in a regular pot on the stove. (Yes, I made it twice in one week, it was that tasty)  Worked out fine either way.  The original recipe had onion powder, and that was the only thing I changed, since I had chopped onions in the freezer and no onion power on hand.  You will need:

1 lb ground beef
1/2 onion chopped (or half a bag of chopped onions)
16 oz of salsa (I used mild)
1 15 oz jar of Tostitos cheese (I used cheese dip, milder than the medium queso)
1 16 oz of sour cream
1 16 oz can re fried beans

I dumped the 1 lb of hamburger meat in my roasting oven.  It is infinitely better than a crock pot (see rant here) because it can go up to 400ยบ and I ended up browning the meat in here.  Hey, one less pan to dirty up is A-Okay in my book.

After browning (and draining if necessary) the meat and onions, add in your other ingredients, including the cheese, salsa, sour cream, re-fried beans, and salt and pepper to taste.

Stir around until combined

Heat on low for a few hours until you are ready for your party.  The original recipe said to heat on high for two hours, but I don't like to do that to recipes that have sour cream in them.  Low and slow seemed to work just great.

Beefy, cheesy, taco dip!  Yum.

Serve hot with hearty corn chips.  Ones that can really hold up to meaningful dipping and not break, because this dip is rather substantial.

Yum.  It was the perfect dip to ring in new years with.  See our disco lights in the background?  It was a Christmas gift from my parents.  Besides this dip it turned out to be the other great thing about our sad little New Years celebration.  Why sad?  Oh yes, and now on to my story.  Well I made a big ol' vat of this dip, then my hubby went and got the flu the day before New Years Eve, so we ended up not going anywhere, and he was quarantined upstairs.  No body felt like cooking, (nobody, meaning me), and we had a ton of dip that everyone loved, so we ended up having this taco dip for New Year's Eve while the girls turned up the music and had a disco dance party to the colorful lights. That almost qualifies as a New Years Party, right?  Then we had it for lunch the next day (their suggestion), a late night snack the later that night, and lunch the next day too.  By the time January 2nd, rolled around, I realized we had survived on this dip the entire time.  Hilarious.  You'd think we would have been sick of it, but nope.  I made it a few days later and took it to our after Christmas after Christmas party with extended family, which they loved as well.  My pickiest eater says she wants it for her birthday meal with corn on the cob and watermelon (high praise if it made it on to her birthday menu).

Warm Taco Dip - the only dip you'll ever need
One other thing, it is easy to spice this thing up.  Our recipe was very mild for the small fry (okay and for me, the zero star Thai girl).  Just add medium or hot salsa instead of mild, add medium queso cheese instead of mild cheese dip, spicy sausage, and add any other spicy things like green chiles or hot sauce to the mix.  This is a great, hearty dip you can bring to any occasion.  Enjoy!

Bacon Appetizers (Pioneer Woman)

A few days before my office Christmas party, I started scouring my Pinterest boards looking for a tasty new appetizer to try.  I mean, what's the point of pinning all that delicious looking food if you don't actually MAKE the recipes every once in a while, right?  I came across this one from one of my favorite Ree Drummond, the Pioneer Woman, and thought I would try them out.

Mmmm  Bacon Appetizers
What's not to love about something with only three ingredients - even if these same said ingredients seem like slightly strange bedfellows?  Bacon. Club Crackers. Parmesan Cheese. Together.  That's it.  I shrugged and thought, well Ree has never steered me wrong in the past, I'm just going to go for it.  First gather your ingredients:

Club crackers, bacon (not thick cut) and grated Parmesan cheese
Take a sleeve of club crackers and lay them out on a 1/2 sheet pan or cookie sheet.  It is highly recommended that you use a rack over the top of the baking sheet, so the bacon grease drips below as it cooks.

I hilariously do not yet have a rack that fits my 1/2 sheet pan (it's on my Christmas wish list... hint hint Mr. D), so I MacGyver'd a make-shift solution using the rack I normally use to cool my cookies on.  It was a little cumbersome and awkward, but it got the job done.  Next, get out your bacon and cut the slab in half

Next, you want to sprinkle a teaspoon of Parmesan cheese onto the length of each cracker

Ree insists you do NOT want the hoity-toity fancy shredded Parmesan here, just the regular green can of grated cheese you would find in your regular supermarket.  That's because these are apparently a "retro" aka "hip" appetizer from the 80's. That was before the popularity of gluten-free everything, the insurgence of kale (which by the way was a salad bar garnish in the 80's), and that healthy police PC list of no-no's for most processed foods that now ravage our land.  People ate bacon back then, and processed cheese, and smoked 2-packs a day, and drank Tab.  People in the 80's didn't care.  People in the 80's knew how to PARTY!

Where was I?  Oh yes.  We are about to take our half strip of bacon, and gingerly wrap it around the cracker withOUT spilling any of the loose Parmesan cheese.  This takes much dexterity and skill by the way.

Try to wrap the bacon so that the loose end is tucked under the bottom of the cracker on the rack.  Soon you will have a few rows of these cute fellas.  I used one full sleeve of the club crackers, but ended up using more than one package of bacon, actually half of a second pack of bacon.

Little piggie blankets, all in a row

Place in a 250ยบ oven for two hours. That's right.  Two long hours.  You can wrap presents, you can do your hair, you can learn to yodel.  Just make sure you know your entire house will smell like delicious, fragrant bacon.  Two hours later you will peek in your oven to find these golden brown, delightful little rows of pure hog heaven.

After you let them cool completely, you can place them on a serving tray.

These are not supposed to be served hot, but at room temperature. This allows time for the crackers to crisp back up and the bacon juices to "settle".   I've also been told you can make these puppies ahead of time, freeze them, and pull them out and defrost them at 250ยบ for a few minutes before serving.    Let's take a closer look:

Cheesy bacon crackers with no name...

Well, they smell awesome, they don't look all that glamorous, but the important question is.... how do they taste??

Well the definitive answer would be bacon! If you like bacon, then this is your new go-to appetizer.  The cracker gets all brown and crispy, the cheese melts slightly down and browns the cracker even more.   I wasn't sure how this would be received by my coworkers.  Again, not the prettiest to look at, and she wouldn't win the swim suit competition at the pageant that's for sure, but she may just walk away with the award for Ms. Congeniality of flavor town!  So here I went, off to the party. hoping for the best.  I laid down my plate of bacon-y goodness and uncovered the foil wrapper.

Bacon appetizers - you cant go wrong!!

My boss was the first to spot them about ten seconds later.  "IS THIS BACON?!"... he shouted and popped one in his mouth.  After that a few more people in the room stepped forward. I saw a couple of husbands look at each other with an approving nod.  This wasn't a cheese ball or a hummus veggie tray, this was cooked MEAT.  I'm not kidding you, within a few minutes, the entire plate was gone.  I totally should have doubled the recipe!  One co-worker told me I was required to bring them to all future company functions after trying just one.  If that's not the mark of a great appetizer, I don't know what is.

By the way, I have also heard that you can replace the Parmesan cheese layer with a layer of brown sugar instead, for a sweet and savory version of the same appetizer.  Now, run and make up a batch of these for your next gathering, and go party like it's 1989!
